Apple Toffee Crunch Cake with Cinnamon Buttercream | Manish's special Birthday!


End of March is always a fun time for us...It's the start of spring and we always get to celebrate it every year due to Manish's birthday. We are all still staying at home, not going out anywhere or gathering with friends due to the Coronavirus Pandemic, but still it was a very special day for us and we celebrated it the best way we could. Manish, my beloved hus and best friend celebrated a milestone 40th birthday! Woohoo!!

I had planned something grand and a had group of good friends ready to help execute it, but it all came crashing down few weeks before due to the coronavirus pandemic and stay at home orders and we had to cancel all the plans. I still did want him to have a lovely day with some fun memories. So with the help of his sister and some friends we came up with a fun video of all his childhood to recent pictures and Birthday wishes from relatives to friends. He was truly surprised and had a big wide smile when he saw the video and wishes.

We put up a fun little photo backdrop to take pics during the cake cutting and few of his friends and our family called in via Zoom video call, which was also a surprise. I kind of tried to keep the theme Black and Gold, however my Appu did not have a suitable black top so he settled for a dark navy blue shirt and the rest of us did our best to wear shades of Black and Gold ;-)
We had a virtual party during cake cutting, spent time catching up with friends and had lots of laughs. He wanted Biryani for lunch, so after all the fun I made him a nice and spicy Mutton Biryani. Will share the recipe soon. Appu and Mihi made him some hand drawn b'day cards and in all it was a nice day.



He wanted an elegant looking cake in some new fancy flavors. What he really wanted was one of those 'Rocky Mountain Chocolate Factory' style gourmet Chocolate caramel Apples, but we couldn't go out now to buy those...so we decided to come up with a cake that somewhat mimics that flavor along with a crunchy bite. So he got an elegant Black and Gold themed Birthday cake in an Apple Toffee crunch flavor with a Cinnamon Buttercream filling inside and a Chocolate Cinnamon Buttercream frosting outside. Yumm!

Walnut Crumble and Toffee Sauce

On the first cake layer: Create a buttercream dam and spread 1 Tblsp Toffee sauce


Spread Cinnamon Buttercream over the toffee sauce and add the Walnut crumble


Repeat above steps with all the layers of cake


Crumb coat with Cinnamon buttercream and allow cake to chill in refrigerator for 20mins


Apply final coating of Buttercream and decorate
I decorated the cake in black colored Chocolate Cinnamon buttercream. I did not create a very smooth finish on purpose and gave the cake a rustic, rugged finish with a lip of buttercream coming over the top of the cake.



For the front of the cake I tried doing the cake stamp technique on buttercream but hand drawn and wrote his name and painted inside it with edible gold. Gold was painted on to the cake trim.



For the top, back and sides of the cake I sprayed on edible Gold with a paint brush. The added some buttercream swirls all around the top and placed a sugar Gold pearl on each swirl.
A black Balloon with some fun wordings and a golden 'Hello Forty' cake topper added the final touches.

This truly is a celebration worthy cake for it has a bunch of little components to prep first before it all comes together. The cake is pretty sweet due to the apple in the batter, the toffee sauce and the sweet buttercream, but it's so worth it!
First I started with baking the cake layers and then I made the Toffee crumble and Toffee sauce. All these components needs to be cooled entirely. Finally the Cinnamon Buttercream and then we are ready to start with assembling the cake.





I followed Tessa Huff's recipe from The Cake Blog and substituted walnuts for pecans as that's what I had at hand. It turned out perfect! The Cinnamon Buttercream recipe below is my own.


Apple Toffee Crunch Cake
Fresh Apple cake with Walnut crumble, Toffee sauce and Cinnamon buttercream

You’ll Need
For the Apple Cake:
3 cups All-purpose flour, divided
2 teaspoon Baking Powder
1 teaspoon Cinnamon
Pinch of Salt
1 cup unsalted Butter, softened
2 cups granulated Sugar
2 teaspoons Vanilla extract
4 large Eggs
1 cup Whole Milk
3 cups peeled and diced Apples ( I used 2 Gala Apples)
½ cup chopped Walnuts

For the Walnut Crumble:
½ cup quick cooking Oats
¼ cup chopped Walnuts
¼ cup Brown Sugar
¼ cup All-purpose flour
3 tablespoons unsalted Butter, softened
2 tablespoons Honey
Small pinch of Salt

For the Toffee Sauce:
5 Tablespoons unsalted Butter
¾ cup Brown Sugar
1 Tablespoon light/dark Corn syrup
⅓ cup Heavy Cream/Whole Milk
1 teaspoon Vanilla
small pinch Salt

For Cinnamon Buttercream
1 ½ cups Butter (3 sticks)
6 cups Confectioners Sugar
1 teaspoon Cinnamon powder
½ teaspoon Vanilla extract
2 or 3  Tablespoon Milk/Water

Directions:
Make the Apple Cake: 
1. Pre-heat oven to 350 F. Grease the bottoms of two 8-inch pans. Line the bottoms with parchment, then grease and flour the parchment and sides of the pans. Set aside.
2. Remove 1/3 cup flour and set aside.
3. Sift together the remaining flour, baking powder, cinnamon, and salt. Set aside.
4. Using an electric mixer, beat the butter until smooth, then add the sugar and mix on medium speed together until light and fluffy. Add the vanilla extract.
5. Mix in the eggs, one at a time. Stop the mixer and scrape down the sides of the bowl.
6. Add half the dry ingredients followed by milk and then add in the second half of the dry ingredients and mix until just combined.
7. Toss the diced apples and walnuts with the reserved flour. Fold in the apples and walnuts into the cake batter until evenly distributed.
8. Divide the batter between the two pans. Bake for 32-35 minutes until golden on top and a skewer inserted into the center of the cakes comes out clean. (Mine actually baked for about 50-55 mins, so keep watching until center is fully baked)
9. Cool on a wire rack for 15 minutes before removing the cakes from their pans and cool completely.

Make the Walnut Crunch:
1. Raise the oven temperature to 375 F. Line a baking sheet with parchment or silicone baking mat and set aside.
2. Combine all of the ingredients together in a medium bowl. Stir together with a wooden spoon.
3. Spread the mixture out on the prepared pan. Bake for 8 to 10 minutes, stirring halfway, until the crumbles are golden brown. Let cool and break into small pieces before use. (I baked for about 20 mins turning the crumble every 2 mins until it was nice and golden brown)
Note: I pulsed the crumble slightly in the food processor for smaller chunks.

Make the Toffee Sauce:
1. Melt the butter in a saucepan over medium heat. Once melted, stir in the brown sugar and corn syrup. 
2. Turn the heat up to high. While stirring with a wooden spoon, bring the mixture up a boil and cook for about 5 minutes or until the sugar dissolves.
3. Remove from the heat and carefully whisk in the cream. Reduce the heat to low. Place the saucepan back on the stove and whisk, slowly but constantly. Simmer for about 8 minutes.
4. Remove from the heat and add in vanilla extract and a pinch of salt. Place in a heat-safe container and allow to cool and thicken.

Make the Cinnamon Buttercream:
1. Beat the Butter until smooth and creamy.
2. Add the powdered sugar in batches until it is fully incorporated with the butter.
3. Add Cinnamon powder, Vanilla extract and milk as needed to combine the buttercream and make it smooth and creamy.

Assemble the Cake:
1. After the cakes have completely cooled, carefully slice them in half horizontally with a long serrated knife.  This will give 4 beautiful layers of cake.
2. Place one of the bottom layers on a cake board.
3. Spread on about 1 tablespoon of the Toffee sauce on the cake and then spread the buttercream in ½" or ¼” thickness and sprinkle with ½ cup of the crumble.
4. Top with the next layer of cake and repeat.
5. Crumb coat the stacked cake with the cinnamon buttercream and set in the refrigerator to chill for 15 to 20 minutes. Then add the final coat of Buttercream and decorate as you prefer. Chill one last time until everything is set.

Notes:
1. If the Toffee sauce is too thick, slightly warm it in the microwave.
2. Pulse the Walnut crunch slightly in the food processor for smaller crumbles, else it will be difficult to slice the cake.
3. If the top of the cake starts browning while baking, cover it with a greased aluminium foil until it gets fully baked.
4. After filling in all the cake layers, I added some cocoa powder and black color to the remaining cinnamon buttercream to frost the outside of my cake to give it that black look.
5. You can divide the cake batter into three 8” pans and make  3x 8” cakes instead, baking time will vary.
6. If you prefer to not add the Toffee sauce in between cake layers, it would go very well on top of the cake as a drip or can be spooned over the cake slice when being eaten, maybe with a scoop of vanilla ice cream...yumm!

Kerala style Salmon Fry | Air Fried


Good day to all my dear friends. I sincerely hope you all are doing well and staying safe at home wherever you are during this Coronovirus pandemic. Although 2020 had started off with a bang for us, it's in quite a grim state now, but we are trying to do our best. The last day my entire family went out was March 13th and we've been home ever since. Except for a quick trip to the pharmacy to collect our meds and to pick up online purchased grocery which wasn't home delivered, we haven't stepped out at all. With 2 small kids, we decided it's best to stay home no matter what. So we are staying home, spending time with the family, trying new recipes, working out, playing board/card games and doing our best to keep everyone happy and calm.

I do want to extend our gratitude and thanks to all the front line workers - all medical staff, grocery store workers, the people who did our online shopping and all other essential facility workers who continue to be brave and are helping keep things normal in this suddenly not-normal situation.  Be safe everyone!

With everyone at home all day all the time now and with no eating from outside anymore, I've definitely had to increase my cooking. I've started using several of my kitchen gadgets a lot more now...lol! and one of them is my 'Emerald' brand Air Fryer that I had bought during 2018 Thanksgiving and hardly used much. We do not do a lot of deep fried cooking or use a lot of oil in our dishes anyways, so never felt a need to use the air fryer, but gave it a try to make this Fish Fry which pretty much turned out like it had been deep fried ;-) But I used no oil at all...except for greasing the tray. Salmon by itself has enough oil in the fish to nicely crisp it up.

The recipe is really simple and Salmon fry makes a great side dish with Rice, Carrot thoran or Beetroot thoran and some pulishery...yum!!


Kerala style Salmon Fry | Air Fried

You’ll need
1 Lb Salmon, cut into cubes
For Marination:
1 Tablespoon Red Chilli powder
1 teaspoon Turmeric Powder
1 teaspoon Black pepper powder
1 Tablespoon Ginger-Garlic paste
Lemon juice (as needed)
Salt as needed



Directions:
1. Mix all the ingredients under marination with enough lemon juice to form a smooth paste. The marination paste should not be runny.(Can substitute lemon juice with water)
2. Coat the salmon cubes well with the marination paste and let it marinate for atleast 30mins-1hour.
3. Pre-heat the airfryer for 10mins. The air Fryer I use sets the temperature to 360F for Seafood.
4. Grease the tray/basket of the air fryer and add the salmon pieces making sure to not over crowd the tray. Best to air fry in small batches depending on number of pieces.
5. Air-fry for 20 mins , turning sides halfway for a nice crust.

If not using Air-Fryer:
Heat 2-3 Tablespoons of vegetable Oil or Coconut oil in a shallow frying pan and fry the marinated salmon pieces on both sides until salmon is cooked and gets a nice brown crust.

Parippu Pradhaman | Onam Special


Wishing all my lovely readers a very Happy and Prosperous Onam! This year my parents are here with us and that makes everything so much more special. 

Daddy's pradhaman (Payasam/Kheer prepared with jaggery) preparations are very popular at home. Both my dad and my father-in-law are in-charge of the payasam preparations during festival season. They put in a lot of effort into the preparations and the payasams always taste amazing. I tried getting Manish to watch and learn how it is made, but I'm sure that didn't work as much...lol! Daddy already made Ada Pradhaman a month back for no special occasion as such. It was so good! It was so good that I was too busy savoring it that I forgot to take a pic for sharing it with you all. ;-)

So last weekend when he made this delicious Parippu Pradhaman/Payasam for an Onam potluck with our friends, I knew it has to come on the blog for me and you all to drool over and prepare in future. :-)



Daddy likes to make his Parippu Pradhaman with split yellow moong dal. Jaggery, Coconut milk and some flavorful spices makes this payasam very unique and apt for serving as a special occasion sweet dish. It's a very easy recipe and tastes divine.  I have tried my best to explain the recipe in detail and almost as exactly as Daddy made it. 
You can see the concentration on Daddy's face as he prepares his signature Parippu Pradhaman ;-)


Parippu Pradhaman
Serves: 3-4

You'll Need
1 cup yellow split Moong Dal
2 cups water

2 cups Jaggery
2 Tablespoons Water

2 cups Coconut Milk (if using canned coconut milk)
3 cups water 

½ teaspoon dry Ginger powder
½ teaspoon Cumin powder
½ teaspoon Cardamom powder
2 Tablespoons Dry Coconut slices
2 Tablespoons sliced Cashew nuts
2 Tablespoons Ghee

Directions:
1. In a heavy bottomed pan roast split Moong Dal until it is golden brown and fragrant.
2. Add 2 cups water (or enough to cook the dal) and cook the dal until it gets soft but not overcooked/mushy.
3. While the dal cooks, in a separate frying pan, heat 2 Tablespoons Ghee and fry the coconut slices until golden brown. Next fry the cashew nuts and keep both aside.
4. Melt Jaggery in a pan with 2-3 tablespoons of water. Strain and keep aside.
5. Once dal cooks well, add the melted jaggery and cook the dal-jaggery mix until jaggery thickens and almost reaches a string like consistency over low heat (when a drop of jaggery syrup is pinched between fingers it should stick and form a thin thread)
6. Divide the 2 cups Coconut milk into 1 cup, ¾ cup and ¼ cup each – which we call 1st, 2nd and 3rd milk.
- Into the 1 cup coconut milk, add 2 cups water – keep aside (1st milk)
- Into the ¾ cup coconut milk, add 1 cup water – keep aside (2nd milk)
- Into the ½ cup milk add Cardamom, Cumin and Ginger powders – keep aside (3rd milk)
7. Now add the 1st milk into the dal-jaggery mix and cook over medium-low heat until the mix thickens.
8. Then add the 2nd milk and continue to cook until the payasam reaches a good consistency. It will thicken as it cools so don't thicken it too much while cooking.
9. Finally add the 3rd milk, stir well and turn off the heat.
10. Garnish with fried coconut slices and cashew nuts – delicious Parippu Pradhaman is ready. Serve warm or cold. Enjoy it as is or with small banana and pappadam …yumm!

Kerala style Mutton Roast | Happy New Year 2019 to all!


Hello and Happy New Year 2019 to all. Hope everything is going good on your end. 2018 had been a good year overall. Other than blogging I must say everything else went on as usual and smoothly. We visited a lot of places throughout the year and it's been a lot of fun watching our 2 year old (Mihibaby) grow. I can't help but say how cute she is. She literally is the apple of our eyes.
2019 has started with a bang for us. Atleast for me there's been a big change. Hopefully all changes are for the best and I'm trying to see the positive side of all things. I've been cooking and experimenting a lot lately and I'm enjoying it a lot. Charlotte weather had been kinda rainy and gloomy with few days of sunshine now and then but it has been a rather cold winter (atleast for my tolerance). I don't remember the last time I picked up my DSLR , Lol! Hoping to use that beauty a lot more this year and hopefully the blog won't stay so silent. 



This delicious mutton roast was our lunch for New Year's day along with naadan matta rice, achingapayar mezhukuperatty and pulissery. My family really enjoys the Mutton Biriyani that I make. I need to get that on the blog someday, if it lasts for a photoshoot that is.... I managed to quickly take a few pics of this deliciousness with my mobile camera. So forgive me if some pics are blurry ;-)



Kerala style Mutton Roast is spicy with an almost caramelized sticky gravy coating the mutton pieces and it is absolutely Yumm! It is best enjoyed with rice, Appam, Chapathi, kerala porotta etc. I love using bone-in mutton, it adds so much more flavor and my favorite pat is to suck the fillings that gets stuck in the bones. The meat has to be bone tender and soft once cooked.



Mutton Roast | Kerala style


You’ll Need
To Marinate:
2lb (~1kg) Bone-in Mutton (cut into bite sized cubes)
1 teaspoon GingerGarlic Paste
1 teaspoon Corriander powder
1 teaspoon Red Chilli powder
1 teaspoon Turmeric powder
1 teaspoon Meat masala/Garam masala powder
1 Tablespoon Black pepper powder
1 teaspoon Vinegar or juice of ½ Lemon
Salt to taste
½ cup Water (for pressure cooking)

To Sauté :
2-3 Tablespoons Coconut Oil
2 teaspoons Fennel seeds
2 springs Curry Leaves
¼ cup thin Coconut slices (optional but highly preferred)
1 large Onion thinly sliced
2-3 Green chillies sliced lengthwise
2 teaspoons Ginger-Garlic paste
1 medium Tomato (chopped)
2-3 Tablespoons Meat Masala/Garam Masala powder
1 teaspoon Corriander powder
1 teaspoon Red Chilli powder
1 teaspoon Turmeric powder
Salt to taste (add as needed)

Directions:
1. Wash and clean the mutton pieces and place it in a bowl.
2. Marinate the mutton with all the spice powders and ingredients mentioned under Marinate section for atleast 30 mins – 1 hour.
3. Pressure cook the marinated mutton with ½ cup warm water for atleast 5-6 whistles. (I used my Instant Pot – Meat/Stew option set for 10 minutes)
4. Meanwhile in a pan, heat the oil and add curry leaves, fennel seeds and coconut slices (if using) and roast until the coconut slices are mildly browned and fragrant.
5. Add the ginger garlic paste, sliced onions and sliced green chilies with a pinch of salt and sauté until onions are soft and caramelized.
6. Now add all the spice powders and roast for a minute and then add the chopped tomato. Roast until the tomato gets soft.
7. Now add the pressure cooked mutton pieces along with all the broth into the onion-masala mixture.
8. Cook everything on medium flame stirring occasionally until the gravy thickens and coats the mutton pieces (should take about 10-15 mins). Better to cook without a lid on as we want the gravy to thicken.

Note:
- Coconut oil makes all the difference….no other oil can provide the unique authentic flavor. CurryLeaves are a preferred must as well.
- We add salt while marinating the mutton, so make sure you adjust adding salt accordingly when sautéing and for the final dish.
- Adjust spice level to your preference. We like it really spicy!! ;-)
- This exact same recipe can be used for Chicken/Beef roast as well.
- I did not have coconut slices but they really taste good with the spicy meat.

Peach Crisp for two | Fruity summery treat


I should've shared this post like weeks ago when we could still believe it is summer but oh well! It's still only 80F outside here in Charlotte, so technically we are still in Summer right? ;-)  Fall is right around the corner and all the apple and pumpkin and Halloween recipes are already doing it's rounds, but here's one last fun summery treat for you to enjoy before all the stores are completely done with selling sweet ripe peaches :-)

Fruit crisps are something I bake almost anytime a dessert craving hits in…which is almost always :-P It’s one of my favorite baked fruit dessert options. The soft and sweet fruit flavored mostly with cinnamon/cardamom/allspice, topped with a chewy and crunchy granola like topping and baked up until bubbly  and aromatic…best served with a nice scoop of vanilla ice-cream or whipped cream! Aahh so nice….
They can be made with all kinds of fruits like apples, pear, peach or any fruit you really like, even berries (blueberry, raspberry, strawberry, blackberry) and the list goes on. Sturdy fruits tend to retain the shape better and give a good bite.  Also the best part is fruit crisps take hardly any time at all from start to finish. All you need are a few simple ingredients and it can be put together in minutes.

I wanted to bake a simple dessert for after dinner one evening that I could make quickly and before Manish and the kiddos came back home from having a lot of fun playing outside with the neighborhood kids….Our little girl get super excited when she sees the older kids playing outside. She puts on her shoes herself and gets all geared up and literally runs along with the bigger kids. I must say, we stay in a beautiful neighborhood where Appu has a lot of like-aged friends (both girls and boys) and it’s a joy to see them all play outside, full of laughter and fun. Manish is often on ‘daddy duty’ to make sure Mihi doesn’t fall or get knocked down …lol!


Peaches are a favorite summer fruit here and we buy them a lot. Most of the time we eat them raw in its nice juicy sweet form, but sometimes few of them aren’t as sweet and those get turned into crisps and crumbles...hehe! Sweet Yellow peaches are our favorite, but we try the yellow, white and all kinds.


I had bought around 3 White Peaches from Walmart which though fully ripened never turned out sweet and tasted quite bland. So they became these beautiful Peach crisps. It’s a perfect dessert that we can bake in a fancy baking dish or cute little ramekins for 2 or 3 people and maybe an extra ramekin for the next day 😉

Peach Crisp (for two)

You’ll Need
2-3 Ripe Peach (Yellow / White)
3 teaspoons Brown sugar
1 teaspoon Cinnamon powder
¼ teaspoon Nutmeg powder
½ teaspoon Vanilla extract
For the topping:
½ cup Oats (I used quaker instant oats)
2 Tablespoons slivered Almonds/chopped Pecans
2 Tablespoon Butter (cut into cubes)
2 Tablespoon Brown Sugar
Pinch of Salt
Whipped cream/Vanilla Icecream – to serve (optional)

Ramekins/ any Baking dish - as needed

Directions:
1. Pre-heat oven to 350F and lightly spray with butter/unflavored oil any baking dish of choice (I used small ramekins so used about 5 ramekins).
2. Cut the peaches into small cubes/slices and mix them in a bowl with the cinnamon, nutmeg, brown sugar and vanilla extract and spoon them into each ramekin/baking dish as desired.
3. In same bowl mix together ingredients for the topping – Oats, nuts, brown sugar, Butter and pinch of salt.
4. Add the topping generously on top of each ramekin/baking dish.
5. Bake at 350F for 15-20 minutes or until the peach mix is all bubbly and the oats crumble get a golden color and is toasted.
6. Serve at room temperature with a big scoop of vanilla icecream or like how I did, a big dollop of sweetened whipped cream!


This makes the perfect dessert for two-three people. Mihi baby wasn't very keen on eating the whole thing, but she enjoyed eating the whipped cream with the oats crumble, probably reminded her of oatmeal :-) Appu, Manish and I gobbled up 3 of them instantly and we still had 2 more to spare. I hadn't filled the ramekins too much, so made extras to have some the next day as well. 
Do try them out with any fruit of your liking. And don't forget to let me know how you liked it :-)
