Jungle Animals themed Cake


I'm so excited to share my first cake this New Year....a super fun, extremely cute and bright Jungle Animals themed tiered cake. Ridhaan's mom is my very good friend and she had asked me to do his birthday cake many months before. Although I wasn't sure if I would be able to make it (due to some other matters) I finally decided to go ahead. Her only request was for a Mango Mousse filling and some animals to go on the cake to match with the Animal themed birthday party she had in mine. Rest all was left to me and sky was the limit....

I'm proud of this cake for several reasons.
(a) This is my first non-fondant tiered cake with a smooth fondant-like finish. It took a lot of time to get the sides smooth and edges straight but it was worth it. There were some imperfections but let's say I decorated over them...hehe :-P These are very important factors in the word of beautiful cakes so it mattered a lot to me as well and I'm glad it worked well.
(b) This was my first tiered cake with a creamy Mousse filling. Mousse fillings are generally very soft and people don't recommend them for tiered cakes or even for cakes that need to sit out for a long time. But I tried it and it worked fine. Maybe I should thank the freezing temperatures here in Minnesota for that!
(c) My first cake with actual sugar figurines that you can eat! :-D

The Cakes were Vanilla White Cake with creamy Mango Mousse Filling covered with color tinted Vanilla Buttercream with marshmallow fondant accents for decoration and figurines. 

Until now I've never really tried making edible figurines, except for the Clowns I made for Lil'Appu's 1st Birthday Cake. Usually I just keep a plastic toy topper or a themed candle topper and just decorate the rest of the cake. But this time I felt with the animal theme it would be great to have some cute looking animals on the cake, so I went ahead with making them.
I made a Giraffe, Zebra, Elephant and Lion. I wish I had made the giraffe neck longer, but other than that I was happy with the rest of the animal figurines. These were made almost a week in advance and they hardened perfectly. 


My son used to come back daily from daycare and go stare at the animals...he just loved them. He is so used to me making cakes for friends that he doesn't touch or disturb my 'cake stuff' and for some reason he thinks he can go for the party anyways and eat the cake and decorations there (which is usually true)...so after the cake is cut its a whole different story, he wants everything first ;-D 
He kept requesting that I make a Monkey as well and I told him we'll make one directly on the cake. I don't know if he understood, but he kept waiting for the monkey every single day :)

The Tree toppers were a last minute addition. After I placed the animals on the cake with the Lion on top I just felt it needed something more...I thought about placing a Sun, but then the colors of the Lion and sun would be almost same (yellow-orange) , so finally decided to place the same trees that I had placed around the cake. Well, you can call them Coconut trees although the leaves should have been longer ;-) It's all in the imagination....hehe! If you notice I even gave small scale like texture to the stem of the tree to give it a proper 3D tree look. I decorated the cake board with chocolate buttercream to give it a muddy ground like appearance and it looked pretty good.

Then there were vines, some grass, more leaves, coconut trees and flowers to complete the overall look of the cake. I wanted the Monkey to be hanging from the tail on a vine and that's how I did it.

My friend had already bought the candle that would go on the cake so we placed that at the venue. Here are some pics of the beautiful Cake Table and cake cutting :)

I'm still waiting for some more pics that the photographer at the party had taken....I'm sure my friend is waiting for those more than me :-P 
The party was super fun, the decorations were perfect and colorful and the food was awesome and not to mention how lovely the cake was...hehe! 
Lil'Ridhaan happily ate up the sugar Elephant and lil'Appu went for the Lion, but I don't have pics of any of that...hopefully the photographer took some :)

Chocolate cupcakes with Buttercream Roses to celebrate 3 years of blogging!


Hello to all. It's been since we all met hasn't it? :-) We went for a much needed, month long vacation to Kerala and let me say....we had enormous fun. Our vacation started with a lovely Onam celebration with our whole family. A House boat trip in the back waters of Allepy and a dream visit to Delhi were some of the other highlights of our trip and yes, we saw the Taj Mahal. It's quite an experience I tell you, you have to see the Taj to know its glory. Another major event was a big pooja that my Dad was sponsoring for our home temple - Sarpa Kaavu. An ancient folk dance event called Padayani was performed throughout the night and the entire village came to see it. The program was a huge success and was aired on several TV channels. And best of all our lil'Appu had the best time of all, playing care-free along with his niece lil'Akku to share all the fun, play and kid fights with. In all it was a superb vacation and we are still in hangover mode ;-)

Anyways, it's time to get off my blog-slumber. Today is a special day and the reason why I'm still here. It's our little blog's 3rd b'day. Now that I think of it, my blog and my baby boy are of the same age now ;-) I'm not going to say too much about how much I love blogging and what it means to me....the fact that I'm still here after 3 years says it all.  
If I have you all with me I'll be here sharing more recipes and all kinds of baking joys from my kitchen to yours and your feedback and comments are what keeps me going.

I love Chocolate Cake and I wanted to try out a really rich and moist chocolate cake. This recipe is perfect in all ways. It's rich, moist and very chocolaty and there's a secret ingredient.....Coffee! Yes, a little coffee adds a huge burst of flavor in this cake. Along with cocoa powder, it also uses fresh bittersweet chocolate, which again adds to it's richness! Yumm! 

It bakes up perfectly and literally perfumes your house with the most amazing chocolaty aroma :-) 



After baking up these beauties I was very much intrigued to try making some buttercream roses, which I've wanted to try for a long time now. So I made a batch of my favorite Vanilla buttercream and tinted them pink and yellow and little bit green for the leaves.

I also tried a dual color tone for the petals which also came out pretty decently. Initially my petals weren't forming properly, but as I continued they started forming and getting in shape. Some of the petals even got a ruffled edge, making it look like a slightly weathered petal. I loved that look. 

I did not get a chance to take any video or step-wise pics while making the roses, mayb next time...but you can find several videos on youtube for this technique.



I'm only sharing the recipe for the Chocolate cupackes here. Both Chocolate and Vanilla buttecream goes very well with these cupcakes. You can find the buttercream recipes here . 


Rich Chocolate Cupcake Recipe
This recipe makes:
24 standard-size cupcakes or
50 mini cupcakes or
Two 8" cakes

You'll need:
3 ounces bittersweet chocolate, finely chopped
⅓ cup Cocoa powder
¾ cup hot Coffee
¾ cup All-purpose flour
¾ cup granulated Sugar
½ teaspoon Baking Soda
6 tablespoons Vegetable Oil
2 Eggs
2 teaspoons White Vinegar
1 teaspoon Vanilla Extract

Directions:
1.Preheat oven to 350 degrees F. Line a standard-size cupcake pan/ mini cupcake pan with liners. Place the chopped chocolate and cocoa powder in a medium bowl. Pour the hot coffee over the mixture and whisk until smooth. Refrigerate mixture for 20 minutes.
2. Whisk together the flour, sugar and baking soda in a medium bowl and set aside.
3. Whisk the vegetable oil, eggs, vinegar and vanilla extract into the cooled chocolate mixture until smooth. Add the flour mixture and whisk until smooth.
4. Divide the batter evenly between the cupcake pan cups.
If making cupcakes, bake for 9mins and turn over the pan halfway and bake for another 9 mins (total of 18-20mins)
If making mini cupcakes , bake for 5 mins one side and turn pan halfway for another 5 mins (total of 10-12 mins)
5. Cool the cupcakes in the pan on a wire rack for 10 minutes, then remove the cupcakes from the pan and place on the wire rack to cool completely for about 1 hour.

Vanilla Buttercream Frosting
Makes 3 cups
You’ll need
Unsalted Butter , at room temp – 1 cup (that’s  2sticks or ½ pound)
Powdered sugar or Confectioners’ sugar (sifted) – 3 or 4 cups
Pure Vanilla Extract – 1 tblsp
Milk or heavy cream – 4 tblsp or as needed
Salt – a pinch (optional)
Directions
1.Beat butter until smooth and creamy using a paddle attachment on medium speed if using KitchenAid mixer or using electric hand blender.
2. Add 3 cups of powdered sugar , little at a time on low speed, until it mixes well with the butter.
3. Increase the speed to medium and add Vanilla extract, salt (if using) and 4 tblsp of milk/heavy cream. Combine well for few minutes until smooth and creamy. 
(If you want a thicker frosting add remaining 1 cup sugar. If you want a thinner consistency add more milk 1 tblsp at a time )

For the Buttercream Roses:
Prepare Vanilla Buttercream and divide them to color into desired colors using food grade gel colors. Make sure the buttercream is of a smooth yet stiff consistency to hold it's shape. 
Add the buttercream into a piping bag fitted with Wilton's Rose Piping tip # 125 and make the swirls.  For a final touch add some leaves using a leaf tip.
(You can make the roses on a nail ring or directly pipe the buttercream roses onto the cupcakes)
Refrigerate each cupcake after the roses are placed on top to help them stay in shape.

I shared these with some friends and colleagues and they all loved it.  But best of all my lil'Appu loved them the most. He wanted all the roses and the mini cupcakes were just the right size for him to enjoy! It's so much fun baking for family and friends :-)

Dinosaur Cake - a simple tutorial


I love experimenting with Appu’s b’day cakes. Because no matter how it turns up I know he’ll love it! I’m a self-taught cake decorator so I love to experiment, specially on the cakes I make for my family. It brings me both joy and also helps me explore various cake decorating skills.
Lil’Appu had a Dinosaur themed party for his 3rd b’day and the first thing he did was ask for a dinosaur birthday cake. Anybody who asked him about his b’day got the reply that ‘I’ll be getting a dinosaur b’day cake’ :-) He was so excited about it and I wanted it to look good.  

I decided to make my first ever carved 3D cake in the shape of a Stegosaurus dinosaur. 
I’m generally a little hesitant to do carved cakes for two reasons (1) what if the carving goes all wrong? (2) wastage of cake – although you could make cake pops with leftovers.  But I made up my mind this time and went ahead with my plans.

Here’s a simple tutorial with whatever pics I could manage to click while building my dino cake.


Step 1: Get the Stegosaurus spikes ready

Start with making the spikes for the Stegosaurus atleast a week in advance. I mixed some tylose powder in my marshmallow fondant but you can also use gumpaste for this as the spikes need to be hardened and stand straight on the cake. 

I used tear drop shaped cutters in three different sizes and then cut out the end from both sides to get a pointed tip at the bottom -> this will help to insert it into the cake. 
The cut out pieces can be either re-shaped or used just as is for the smaller spikes.
Make marks all over the spikes in straight lines to give it a rugged appearance and some texture.  Make several extras incase they break.
Plcae them on a baking sheet with wax paper to dry for atleast 4 days at room temperature.


I do not own an air-brush for spray coloring the cake, so this time I decided to give a try at using the Color Mist Spray colors by wilton and it worked like a charm :-) I spray misted the spikes on both sides with yellow and allowed them to dry. Then I painted the orange color in the middle using Orange luster dust mixed in vodka. Do this atleast 3 days before.

 

Step 2 : Bake, shape , fill and frost the cake

Ideally the body should be more oval-dome shaped than round-domed but I did not have an oval shaped pan so I used my regular round cake pans. 
For the body of the dino, I baked two 8” round cakes and one domed round cake in my small glass pyrex bowl.  Made Vanilla Buttercream and stacked them all together like this.

The flavor was a rich Chocolate-Espresso cake with lots of chocolate chips. 


To get an overall dome shape I gently carved out some cake from the top 8” cake (below the round domed cake) in a downward slant until it blended with the rest of the cake and it finally looked like this.


Frost the entire cake with vanilla buttercream. I just did a rough frosting as I was going to be covering the cake in fondant anyways, but make sure all gaps are filled in and the edges are quite smooth.


Step 3: Model the head, legs and tail (Can use Fondant, Cake or Rice Krispie treats)

I was planning to make cake-pop mix using the cake scraps after the carving to use for making the head,  legs and tail of the dino.  But I didn’t have to carve out a lot and had no extra cake on hand, so I used some leftover fondant that I had from doing a previous cake. So the Head, Tail and Legs of the dino were made with Fondant.   
(You could also use Rice-Krispie treats if you want)

The Stegosaurus head is small when compared to body and is sort of tapered with a beak like mouth.
The two front legs are smaller than the two back legs.
The tail is thick (specially where it joins the body) and its long and tapered at the end.


Step 4: Covering with Fondant 

Finally drape the whole cake including the head, legs and tail in fondant (I kneaded my fondant light green while making it) and trim away excess fondant.

Using a ball tool make holes for the eyes, small nostrils and make a shape for the mouth.
Again make vertical markings all over the body of the cake, the tail, head everywhere, to give it some texture and a scaly bodily appearance. Take care to not tear the fondant though.


I then Spray Misted the cake with Green :-) Let the cake dry out at room temp for 1-2 hrs.


Step 5: Place the spikes and give finishing touches

Now add the spikes on the cake body.  Starting with smaller spikes on the head, then bigger spikes in the center and smaller spikes again towards the tail, ending with pointed spikes at the end of the tail. I had to make small cuts with a knife to help insert the spikes into the body without breaking the spikes.
I made two small white balls for the eye-balls and used an edible marker to add the black pupil for the eyes.

Finally the finishing touches:
-- The cake board was coated with Chocolate buttercream for a muddy appearance.
-- Green grass  (vanilla buttercream colored with green) was piped all around the dino-cake to make it look as if the dino is resting in the grass. Used Wilton grass tip 233 for this.
-- Crushed graham cracker biscuits resembled sand and I added that all around the dino near the grass.


Just before the party I used some royal-icing to write ‘Happy Birthday Manav’ on the cake board. And this is how it looked.


The whole inspiration behind this dino cake was a tutorial I saw of a Stegosaurus cake by Montreal Confections and I just couldn't get it off my head :) so even though I was planning a T-Rex cake I finally decided to do a Stegosaurus with the pretty spikes on its body.

Tres Leches Cake to celebrate MED's 2nd b'day :-)


Two years and I’m still here sticking on to a hobby that I just started for fun. It’s been two full years now and my blog is as old as my baby boy and has been a part of my family through thick and thin. I feel so proud today as I write this post for having successfully completed two years into blogging and still continuing. Happy Birthday MED!! 
( Oct 15th was the actual date, but what's in a date or mayb I forgot... oops! :-P)


Last year I was so excited about celebrating the First Anniversary of my blog baby and I made my first ever buttercream decorated CheckerboardCake incorporating the colors of fall and I even shared my story on how this blog was born! 
And since then this baby has grown and grown, from having close to 2,97,000+ total blog visits (as of today), receiving an average of 11,000 page views per month, more than 100 recipes, 900+ followers on my Facebook Page and several Twitter, Instagram and Pinterest followers. The stats may not sound too great when compared with other blogs that achieve more than this within a single year, but for me its precious beyond words. I cherish each and every feedback, comment and suggestion from my readers. My family has supported me and helped me in so many ways to help me continue with my passion on the blog and I enjoy every minute I spend on this virtual space of mine and the friendships I have made through this forum is priceless and I hope it grows and lasts. 

I know I’m not a very regular blogger and there are dry stretches when I hardly blog or update anything here and I've had my share of writers block or blogger's blues as they call it, but the moment I share a new post I have seen how my stats go up and I know there are people waiting for my posts. I love you all for this constant encouragement and I hope to continue it. I know as a person and as a blogger I have definitely grown up a lot and I want to continue to share snippets from my kitchen, home and life to you all. There's still lots to learn, lots to share and lots to improve upon and I want you all to come join me through all this fun and excitement. Your feedback is my fuel and that’s what’s most important to me, so lets continue to keep in touch!


This year also I wanted to plan an elaborate blog anniversary worthy treat, however life got in my way in the form of busy schedules, sick baby, early bed times and more Appu time, so I had to use up a treat from my drafts ;-) I had made this simple Tres Leches cake last week for a casual dinner get-together with some good friends and I thought it was quite elegant in its own way to be a part of my blog’s second anniversary! 

Tres Leches is Spanish for Tres = Three and Leches = Milk, so it’s a three milk cake and its super gooey and yummy with all the goodness of milk in the form of Sweetened Condensed Milk, Heavy Cream and Evaporated Milk. OOH ya!  The cake itself is a fatless sponge cake with lots of air bubbles which helps in soaking up the three milks syrup, which is simply poured on top of the cake and allowed to rest overnight. The final result is a very moist, sweet and not at all soggy cake.


You could just eat this cake as it is without any fancy frosting or anything, but some cool whipped cream and some bites of fruit adds to the elegance of the cake and brightens up the flavors. I used canned peaches (peaches and cream is a match made in heaven you all) and also used some glazed cherries for some color. I had no plans of how to decorate the cake and as I kept swishing the whipped cream up and down the cake, it sort of resembled the shape of a flower and I left it at that…a rustic flower pattern!

The recipe for the Tres Leches cake was taken from the Daring Baker’s challenge which was hosted by Imma of La Galletika and the feedback from the various bakers who used this recipe and baked their tres leches cake's were immense and I did not have to think twice.


Tres leches Cake or Classic Three Milks Cake

You’ll need
For the Vanilla sponge cake
Eggs - 5 large (Yolk and Egg whites separated)
Sugar - ½ cup (120 ml / 4 oz / 125 gm)
Vanilla Extract - 2 tsp (10 ml)
All-Purpose flour (sifted) - 1 cup (240 ml / 5 oz / 140gm)
For Three Milks syrup
Sweetened Condensed Milk - 1 can (14 oz / 400 gm)
Evaporated Milk - 1 can (12 oz / 340 gm)
Heavy cream (about 35% fat) – 1 cup [or 1 cup of half & half / 1 cup milk (240 ml) ]
1 cinnamon stick
Rum or other flavoring (optional) - 2 tsp (10 ml) (I just added vanilla extract)
For Frosting and Filling
Whipping cream or heavy Cream - 2 cups (500 ml)
Confectioners’ Sugar or Powdered Sugar – ¼ cup  
Canned or fresh fruit (to fill and decorate the cake)

Directions:
1.  Preheat oven to moderate 180°C/350°F/gas mark 4. Grease a square 9”x9” (23cmx23 cm) pan or 9”(23 cm) round cake pan.
2.  Separate the egg whites from the yolks. 

3.  Beat the egg whites on medium speed, 3 – 5 minutes. When soft peaks form slowly add the sugar in small batches. Whip until stiff peaks form about 5 minutes and set aside.
4.  In a medium bowl beat egg yolks at medium-high speed for about 5 to 6 minutes, or until the egg yolks become pale colored, creamy and puffy. Stir in vanilla extract.
5.  Pour the egg yolks over the egg whites, gently fold until just combined trying not to lose any volume from the mixture.
6.  Fold in the flour little by little in the form of rain. Mix until just combined (over-beating will result in a denser, flatter cake).
7.  Pour the batter into the prepared 9”x9” (23cmx23 cm) square cake pan or 9” (23 cm) round cake pan.
8.  Bake in the preheated oven for 25 minutes or until the toothpick comes out clean and allow it to cool to room temperature completely
.
9.  Once cool, split/torte the cake in half, flip the top of the cake and place it on a base. Poke using a fork holes all over the cake to better absorb the three milk soaking liquid. 

Prepare Three milks syrup
1. In a saucepan add the sweetened condensed milk, evaporated milk, heavy cream and cinnamon stick,
bring to a boil, reduce the heat and continue boiling for 5 minutes. Remove it and let it cool.
2. Once it is cool, add the rum or any other flavoring you are using
3. Gradually brush all the milk soaking liquid into all sides of the cake (including the cut surfaces), slowly until all absorbed. Best to rest the cake in the fridge overnight to complete the soaking process.

Frosting and Filling
1. Whip the cream, when soft peaks form add the sugar little by little, continue whipping until stiff peaks form (about 2 mins).
2. Layer some whipped cream on the bottom layer and cover with canned or fresh fruit and decorate the top layer with whipped cream and the fresh or canned fruit.



My friend's, who have eaten several tres leches cakes from bakeries, found the homemade one really delicious. I felt my sponge was a bit dense (need to improve my sponge cake skills) but it soaked up the three milks very nicely. My lil’Appu happily gobbled up a huge slice both at my friend’s place and also the slices we brought back home for him…yes, just gobbled it up I say! He poses for me while chomping away ;-)

Vanilla Rhubarb Cake


So it’s the 1st of July. Nothing special about today but 10 days from today my little guy is gonna turn 2 years old…Whaat!!! Really?? :-) Yes, really. And I’m not gonna go blah blah on “Oh my goodness, how did that happen” and “where did the time fly” and all. I know very well how the time went by and I and my family and my lil’Appu has enjoyed every bit of it. Unless you count those sleepless nights and days of sickness and unnecessary fussiness and tantrums…but that’s how it is right ? :-)

I’m still thinking of what to do for his birthday and though I do manage to end things well, I suck at party planning. I’ll be brimming with ideas but can’t put things together until the last moment. So well, lets wait n watch what his birthday will shape out to be!


For today let’s just enjoy something sweet , a cake made with a very seasonal produce called Rhubarb. 
Have I told you yet that I love our Downtown Farmers Market. I know there are are bigger and better Farmer’s Markets out here in Minneapolis, but since I work downtown, that’s my favorite spot as I get to shop-at-work :-P


I had been eyeing Rhubarbs since last year as I’ve seen a hell lot of recipes with the same but never thought of trying it until a friend on facebook shared a recipe she made and asked me to try it out. And I was like…OKAY!! Always ready to try something new and if its Cake…yes please!! So the next farmer's market I trotted off only with Rhubarbs on my mind and I'm glad I found some really fresh, red and long ones.

I bought the Rhubarb home, chopped it and tasted a piece and I was like ‘Yuck’! What the heck is this? Even my dad tasted it and was sure this would turn out to be nothing but horrible. Only my Lil’Appu seemed to not mind its heavily tart almost nauseating raw flavor, when I gave him a tiny piece…kids have weird tastebuds!! But I still went ahead with the recipe. I chopped up the Rhubarb and macerated it in some sugar for sometime (hoping that will draw out the tartness) while I made the batter.


Now let me also share a foolishness I did while making the batter for this cake. Apparently in my friend’s recipe it stated to add all the ingredients (wet and dry) into a blender and blend well. And in my mind a blender meant my mixer grinder (or mixie), which is also called blender here. So though a bit doubtful I went ahead and did that. Initially the batter got stuck but then I added some extra milk to combine it together the batter came along just fine. So this turned out to be my first ever MIXER-GRINDER Cake....phew! :-P 

Later my friend said she had typed it wrong and it should have been to mix with an electric hand mixer, but as we both live in two different time zones she din’t get to read my queries and doubts until next day(for her) and I dint get time to see her reply until after I made the cake :-)

While the cake baked I made a quick Vanilla custard using store bought Custard powder+Milk+Sugar as I din’t have any icecream or whipped cream to serve with the cake. But inspite of my mixer-grinder batter, the cake turned out great. The custard also complemented the cake very well.


The cake was the perfect texture and sweetness and the Rhubarb was completely transformed into a sweety-tart raspberry like flavor. I mean, it was not the same rhubarb that I tasted before baking. It was delicious! My mom and dad went for second helpings of the cake with some custard (which is very rare) And to jazz up the cake a bit I had added sweetened coconut flakes on top which got beautifully toasted and added a whole lot of flavor.


Vanilla Rhubarb Cake

You’ll need
Rhubarb stalks, chopped - 250g (I used 2 cups)
Sugar – 2 tblsp
All-purpose flour - 1½ cups  (175 g)
Butter, at room temp - 1 ¼ cup (150g)
Sugar - ¾ cup (175 g)
Baking powder - 1½ tsp
Dessicated coconut - 3-4 tblsp (50g)  (I used sweetened coconut flakes)
Eggs - 2
Milk – ¼ cup + 3 tbsp
Vanilla sugar - 1 tsp ( I used 1 tsp Vanilla Extract)
Salt – a pinch

Directions
1. Preheat oven to 350F and grease a 9” cake pan and set aside.
2. Cut the Rhubarb stalks into small pieces and drizzle it with 2tblsp sugar and let it macerate for about 10-15mins.
2. Using an electric hand blender or kitchen aid mixer- beat the eggs, 4tblsp milk, Vanilla extract and 2 tblsp dessicated coconut (or coconut flakes) until just combined.
3. Add in the flour, sugar, baking powder, a pinch of salt and slowly add in the ¼ cup of milk and mix well until a smooth and semi thick batter is obtained.
4. Remove the juices from the macerated rhubarb. Sprinkle 1-2 tblsp flour over the rhubarb and coat it on all sides and add it to the batter and slowly fold it in making sure its evenly distributed and pour batter into cake pan. Sprinkle remaining 2 tblsp coconut flakes on top.
5. Bake for 35-40 mins until done or a toothpick inserted in the middle come out clean. 
Serve with Crème Fraiche or Ice-cream or Whipped cream or Vanilla Custard on the side.

Few changes I made:
1.The recipe only called for 3-4 tblsp milk, I added an extra ¼ cup milk to help my mixer grinder to rotate without getting stuck, but it made a really good batter and I’m sticking to this.
2. I replaced the vanilla sugar with vanilla extract.
3. I used sweetened coconut flakes instead of desiccated coconut and I added some in the cake batter and also on the top which resulted in a toasted crunchy coconutty topping, but this is optional.


So for those of you who’ve never tried Rhubarb but have always wondered what to do with these pretty red stalks Wow your friends and guests by trying out this cake.  Its foolproof and so damn simple and a perfect tea cake and a crowd pleaser and I've made this cake two times already....... OK, I should stop now! :-)
